Breakfast Roll-Ups

6 slices Canadian bacon

2 cups hashed brown potatoes

2 cups Egg Beaters® 99% egg substitute

16 flour tortillas, fat free

8 tablespoons salsa

Brown bacon and hash browns in skillet. Combine Egg Beaters and salsa in bowl, pour into skillet and stir occasionally until cooked through. Spoon into flour tortillas (I use fajita size), and roll up. Place in freezer bags and freeze. To serve, place in microwave, covered, and heat for 1 minute per burrito (give or take). posted to Frozen Assets List
