Better-Than-Potato Salad

Ingredients
3 1/2cupRice, converted
8cupwater
1 1/2tablespoonsalt
7cupmayonnaise
3cuponions, finely chopped
1/4cupprepared mustard
2teaspoonsalt
7cupcucumber, pared and diced
2cupradishes, sliced

Directions:

1. Cook rice in water with salt according to package directions.
2. Cool.
3. Combine mayonnaise, onion, mustard, and salt. Stir into rice.
4. Cover and throughly chill.
5. Stir in cucumber and radishes just before serving.
