What does it Mean to Sear Meat?

Answer:
Searing is a cooking method generally used on meats such as beef, pork, poultry or fish. The idea is to create a caramelized crust by placing the meat on a very hot pan, mesh grill or broiling pan and allowing it to cook at high heat until a dark brown surface appears.

Searing is not the same as charring, which would leave the surface black and burnt-tasting. Instead, the goal is to convert the natural sugars of the meat and any dry seasonings into a crispy outer layer while preserving the juiciness of the internal layer.


 

What is Dry Rub?

Answer:
When it comes to barbecuing or smoking meats, there are essentially two forms of seasoning and marinating-- a wet rub based primarily on a barbecue sauce or a dry rub composed entirely of dry spices. A good dry rub should draw some of the moisture out of the meat to form a flavorful sauce-like coating without the addition of liquid ingredients such as bottled barbecue sauce.

 

What are Spare Ribs?

Answer:
There are three major sections of a pig's ribs, starting with the upper baby back ribs, the middle to lower spare ribs, and finally the rib tips. The type of ribs most likely to be served in barbecue restaurants are the spare ribs, which contain flavorful pork meat and fat between and below long rib bones.

The Kansas City Barbecue Society sanctioned American Royal Barbecue is THE largest barbecue contest...in the world...period!  The American Royal Barbecue is considered the season finale of the barbecue contest circuit, where contestants from all around the globe come to compete, share good food and good times.
