What are some Popular Woods for Grilling?

When it comes to grilling, some of the most popular
and my personal favorite woods are cherry, pecan and hickory because they lend a smoky sweetness to all kinds of meats.


For red meat, the unquestioned choice is oak wood which gives a strong smoke flavor, whereas apricot, plum, peach, and nectarine are suitable for lighter meats.

Alder is used traditionally on the Pacific coast mostly to grill salmon. But the wood most popular with restaurants is perhaps mesquite which supports short cooking times while imparting a hearty flavor, but it requires professional handling and mixing with other woods to prevent bitter flavors.
