Direct heat is a form of grilling where the
food is put directly over an evenly spread source of heat. You can cook burger patties in this way or grill any cut of meat or vegetable less than two inches thick. The only trick involved is determining the suitable temperature for the grill.


I put anything that takes less than twenty minutes to cook on direct heat grilling, starting from sausages, thin pieces of steak to kabobs. Direct heat is also great for searing steaks or larger cuts of meat for about 2-5 minutes before slow-cooking in order to give that scrumptious glazed look.
