Summer isn’t the only season for grilling foods
anymore. I personally like a steak or a charbroiled piece of chicken grilled inside or out all year long, and one of the secrets to grilling great beef, pork, chicken, turkey or fish is marinating it ahead of time.


Marinating meat or fish is a simple process of soaking food in a slightly acidic liquid (a marinade) to improve tenderness and flavor, while making it healthier. Some sources say marinating meat helps reduce cholesterol levels.

Marinating time varies according to the particular recipe and can run from a few hours to soaking overnight. I’ve found marinating meat the night before is a great fit for a working lifestyle.

Marinade recipes use a wide range of common ingredients found in your food pantry, such as orange juice and onions or you can use more exotic specialties like roasted garlic or papayas. Spices, liqueurs, wines and beer are often included in recipes.

I like to try prepared marinades, as well as homemade, and several varieties are available at the local supermarket. Just ask for recommendations at the meat department. The Internet is another great source of free marinade recipes.

The “perfect” marinade recipe is really a matter of trial and error, depending entirely on your taste. Don’t be afraid to experiment !
