A mimosa is a fizzy, celebratory brunch or breakfast
drink that usually contains champagne and orange juice. I usually keep both the juice and the champagne chilled. This ensures that ice, which could dilute the drink, is not needed at all.


To make a mimosa, pour 30 ml of orange juice in a champagne flute and gently top it up with 90ml of champagne. Do not stir or you will ruin the champagne bubbles: the heavier champagne descends by itself and mixes with the orange juice. You could replace the orange juice partly with orange liqueur or passion fruit juice to make interesting variations.
