A mimosa is a fizzy, celebratory brunch or breakfast To make a mimosa, pour 30 ml of orange juice in a champagne flute and gently top it up with 90ml of champagne. Do not stir or you will ruin the champagne bubbles: the heavier champagne descends by itself and mixes with the orange juice. You could replace the orange juice partly with orange liqueur or passion fruit juice to make interesting variations. Here is a recipe for a Midori Mimosa .
