What is Teff?

Teff, also written as “taf,” is
a grass that is native to Ethiopia and Eritrea, in Africa.  Teff is a grain that can be made into flour, and is used in such foods as injera, a flatbread found in the cuisines of northeastern Africa.  This grain is high in iron, dietary fiber, calcium, and protein.


Teff gives foods a slightly sour taste, similar to quinoa or millet.  Although it grows wild only in the Ethiopian Highlands, it has been cultivated around the world, including countries such as the United States and Australia, because of its sustainability and nutritional content.  The grain can also be known as lovegrass and annual bunch grass.
