What is Ghee?

A type of clarified butter from the Indian subcontinent,
ghee is used in cuisine from many different countries.  In addition, ghee is used in various Hindu and Vedic rituals, as well as in funerals, marriages, and fuel for a Hindu votive lamp.  Ghee is actually used in sacrifices in Hinduism, along with the four sacred substances: milk, sugar, honey, and yogurt.

Ghee is primarily used in India but can also be found in Egypt, Ethiopia, Morocco, and Brazil, among other countries.  It takes a large role in ayurvedic medicine, and can be mixed with certain herbs in order to increase the potency of the mixture.  Ghee is thought to balance stomach acid, help the stomach stay healthy, and prevent scarring if applied to the skin.

To prepare ghee, unsalted butter is simmered until the proteins have settled to the bottom and the water has boiled away.  The clarified butter will remain on top and is spooned off and put into an airtight container.  Ghee does not need to be refrigerated if it is stored correctly.
